Look at Pound Cake from 1 to 4 and make the cookie dough. Divide the dough into two, a one
thirds portion and a two thirds portion. Combine the cocoa powder and the
divided mixture (one thirds) until incorporated. Fold the plain dough and
the cocoa dough a few times to make marble pattern.
Divide it into 8 equal portions and shape each into a ball. Keep in a refrigerator until use.
[Leaving to rise] Leave to rise for 40-50 minutes, or until 2 times in size.
Roll the cookie dough out into a circle about 10 cm (4 inch) in diameter.
Place the seam up on the cookie dough.
Bake at 170 degrees C (338 degrees F) for 13 minutes.
Coat the dough with the cookie dough, leaving the bottom. >>
Sprinkle the cookie dough with the granulated sugar.
Cut shallow lines across the top with a bread scraper.
