Coffee Ice Cream


Ingredients (for 2 people)
whipping cream
50g
*Anglaise
milk
yolk
sugar
instant coffee
100g
20g (from 1)
40g
1.5g (1.5 tsp)
1. Put the yolk and half sugar in a bowl. 5. Stir over low heat.
Whisk until thick. The mixture becomes brown.
2. Pour the milk into a sauce pan. Add the milk and the instant coffee. Boil the milk. 6. The mixture is thick a little. Take off the fire.
3. Pour 2 into 1. 7. Drain into a bowl.
4. Pour into the sauce pan. 8. Place in a bowl of ice water and cool completely.
9. Place the mixing bowl in a larger bowl of ice water. Beat whipping cream until stiff peaks form.
Pour the anglaise little by little and whisk until smooth.
10. Pour the mixture into a container. Freeze until firm.
