Coffee Ice Cream

| Ingredients (for 2 people)
| whipping cream
| 50g

| | *Anglaise | milk yolk sugar instant coffee
| 100g 20g (from 1) 40g 1.5g (1.5 tsp)

Put the yolk and half sugar in a bowl. |

Stir over low heat. |
 |

Whisk until thick. |
 |

The mixture becomes brown. |

Pour the milk into a sauce pan. Add the milk and the instant coffee. Boil
the milk. |

The mixture is thick a little. Take off the fire. |

Pour 2 into 1. |
 |

Drain into a bowl. |

Pour into the sauce pan. |
 |

Place in a bowl of ice water and cool completely. |

Place the mixing bowl in a larger bowl of ice water. Beat whipping cream until stiff peaks form. |

Pour the anglaise little by little and whisk until smooth. |

Pour the mixture into a container. Freeze until firm. |
