Green Tea Ice Cream


Ingredients (for 2 people)
whipping cream
50g
*Anglaise
milk
yolk
sugar
powdered green tea
100g
20g (from 1)
40g
2g (1 tsp)
1. Put the yolk and half sugar in a bowl. 4. Stir over low heat.
Whisk until thick.
Sift the powdered green tea into the bowl. 5. The mixture becomes green. And the mixture is thick a little. Take off the fire.
Whisk until incorporated. 6. Drain into a bowl.
2. Boil the milk and remaining sugar. Pour the hot milk. 7. Place in a bowl of ice water and cool completely.
3. Pour into a sauce pan. 8. Place the mixing bowl in a larger bowl of ice water. Beat whipping cream until stiff peaks form.
Pour the anglaise little by little and whisk until smooth.
9. Pour the mixture into a container. Freeze until firm.
