Green Tea Ice Cream

| Ingredients (for 2 people)
| whipping cream
| 50g

| | *Anglaise | milk yolk sugar powdered green tea
| 100g 20g (from 1) 40g 2g (1 tsp)

Put the yolk and half sugar in a bowl. |

Stir over low heat. |
 |

Whisk until thick. |
 |

Sift the powdered green tea into the bowl. |

The mixture becomes green. And the mixture is thick a little. Take off
the fire. |

Whisk until incorporated. |

Drain into a bowl. |

Boil the milk and remaining sugar. Pour the hot milk. |

Place in a bowl of ice water and cool completely. |

Pour into a sauce pan. |

Place the mixing bowl in a larger bowl of ice water. Beat whipping cream until
stiff peaks form. |

Pour the anglaise little by little and whisk until smooth. |

Pour the mixture into a container. Freeze until firm. |
